Here is a delicious and refreshing summer salad recipe!


TORTELLINI SALAD

1 (20-ounce) package refrigerated cheese tortellini

1 cup fresh mozzarella, cubed

1 cup pepperoni, chopped

1 cup cherry tomatoes cut in half

1/3 cup fresh basil, chopped

2/3 cup Caesar salad dressing

Salt and pepper to taste

Cook tortellini according to package directions; drain and rinse with cold water and drain again.  Transfer cooked tortellini to a large bowl and add remaining ingredients.  Toss well.  Refrigerate at least 1 hour before serving.

  3. I use portobello mushroom tortellini instead of the cheese tortellini and I use cole slaw dressing instead of caesar.

  4. I'm using beefsteak tomatoes because that's what I have on hand at the moment. Do the cherry tomatoes make a big difference?

  7. Made this today for lunch. I added a few things to pump up the volume with out adding many calories. I used Lite dressing (Ken's) that was really good. I added 15 black olives, and half of a large cucumber. I REALLY liked this. I was also lucky to find MINI pepperoni! How cute is that?? Plus then I didn't have to cut them. This is going into my rotation and also my 6 yo's lunch tomorrow. Thanks for sharing!

  9. I made this exactly according to the recipe. It was delicious and easy. Tastes like a caprese salad but much mor filling. The only thing I did different was cooled the cooked pasta in the fridge for 15 minutes before adding all the ingredients because I was afraid the cubed cheese would melt. Will make this again.

    1. The recipe calls to drain the pasta and rinse under cold water. That cools it off. :)
