This is a delicious cheese ball that is sure to please a large crowd! Don't let the raspberry preserves scare you :) Somehow, it's a wonderful combination! This recipe is from my sweet Aunt Doris who lives in Louisiana...she is a fabulous cook!





CHEDDAR-PECAN BALL

1 pound block sharp cheddar cheese, grated

1 cup Hellman’s mayo (please don’t use any other mayo)

½ cup finely chopped onion

¼ t. salt and pepper

¼ to ½ t. cayenne pepper

1 cup chopped pecans

1 jar raspberry preserves

Beat first 5 ingredients at medium speed until mixed well.  Stir in pecans and form into 2 balls.  Chill cheese balls 8 hours.  Top with raspberry preserves just before serving.
