  3. Tried this today. Would eliminate cilantro entirely and reduce green onions by half. Interesting dish. Requires a breath mint or two.

  5. Thank you for your feedback Amanda and Tasha! Love both of your suggestions :) I just started adding some chopped, grilled chicken to it, and you have a delicious light meal for these hot summer months that are soon to be upon us!

  6. Made this last night and as another comment suggested, added some chopped cucumber. It's very good but next time I'll leave out the cilantro. Thank you!

    2. I used parsley instead of cilantro and it was great, I really like this salad and was able to use up things I had in my pantry that needed to be used: black beans :)

    1. Hope you don't mind me answering. Since the black beans are canned, all you need to do is drain & rinse them. I've actually never used thawed frozen corn in recipes, so I can't attest to that. I always prefer to go with canned. :)

  15. Just made this for our Mother's Day potluck meal tomorrow. I love all the ingredients-this salad is full of flavor! I really like tomatoes so I might add some more. The cilantro and black beans make this salad different from other pasta salads-that's what caught my eye . Thanks for posting this recipe! (It makes a lot!)

  17. I love the idea of these ingredients, but don't understand using an Italian dressing...I would use some salad dressing with a Mexican flair...chipotle ranch or honey chipotle ranch..

  18. Do you drain the rotel? It doesn’t look like there’s any juice from that on the salad.
