Melissa Friday’s Chicken Salad
4 cups cooked chicken, chopped
½ cup celery, chopped
½ cup onion, chopped
1 large apple, chopped
½ cup pecans, chopped
1 cup sharp cheddar cheese, grated
1 cup mayo
2 tablespoons rice vinegar
2 tablespoons sugar
2 tablespoons honey
Salt and pepper to taste
Mix all ingredients together, stirring in the chicken
last. Refrigerate for at least 6
hours. Overnight is best. Serve on your favorite bread or with your
favorite crackers. Enjoy J
