Baked Salmon with Pecan Crunch Topping
4 salmon filets
Salt, pepper, garlic powder and onion powder
2 tablespoons course ground Dijon mustard
2 tablespoon real butter
1 tablespoon honey
¼ cup seasoned breadcrumbs
¼ cup chopped pecans
1 tablespoon chopped fresh parsley
Pat salmon dry and season with salt, pepper, garlic powder
and onion powder. Place the filets,
skin-side down, in a baking dish. Mix
together the mustard, butter and honey and spoon over the filets. In a small bowl, mix together the breadcrumbs,
pecans and parsley. Spoon this over the
filets as well. Bake in a 450 oven for
12 minutes or until the fish flakes.
Delicious served with couscous and a nice salad. Enjoy J
