ENCHILADA PIE
HOT PEPPER RICE
MEXICAN SALAD
NUTTER BUTTER ICE CREAM BALLS
ENCHILADA PIE
1 lb. ground sirloin
½ cup onion, chopped
1 tablespoon flour
1 small package taco seasoning
2/3 cup water
1 can enchilada sauce
4 wheat tortillas
½ can black beans, rinsed and drained
½ can kidney beans, rinsed and drained
1 (8-ounce) package 4 cheese Mexican Blend
Brown ground sirloin and onion in a skillet. Add 1 tablespoon flour and stir well. Add taco seasoning and 2/3 cup water,
stirring well. Simmer for 10
minutes. Remove meat mixture from
heat. In a 2-quart round baking dish,
place 1 tablespoon of enchilada sauce at the bottom. Now place a tortilla on top of the
sauce. Add a spoonful of the meat
mixture over the tortilla, sprinkle some beans over meat, drizzle a little
enchilada sauce over the beans and then sprinkle with a little cheese. Repeat layers until you’ve used all 4
tortillas. Cover with a little more
shredded cheese and bake at 350 for 30 minutes.
Let stand for 10 minutes before cutting.
I cut mine like a pie and serve guacamole, sour cream, jalapenos and
salsa with it J
HOT PEPPER RICE
3 cups cooked white rice
1 cup sour cream
1 small can green chilies, chopped
1 fresh jalapeno, seeded and chopped (optional)
8 ounces Pepper-Jack cheese, shredded
2 ounces sharp cheddar, shredded
Combine first 4 ingredients and layer half of rice mixture
in a greased baking dish. Mix cheeses
together and top with half of the cheeses, repeat with rice mixture and sprinkle
top with remaining cheeses. Bake at 350
for 15 minutes.
MEXICAN SALAD
1 bag lettuce
1 tomato, chopped
½ can kidney beans, drained and rinsed
½ can black beans, drained and rinsed
1 small can corn, drained
Sharp cheddar cheese, shredded
1 cup crushed Doritos
Russian dressing
Toss all together and serve.
Delicious!
NUTTER BUTTER ICE CREAM BALLS
1 package Nutter Butter cookies, crushed
Reese’s Peanut Butter Cup Ice Cream
Hot Fudge sauce
Caramel Sauce
Take a scoop of ice cream and roll into a ball. Roll the ice cream ball into the crushed
cookies. Place back into the freezer
until ready to serve. Just before
serving, drizzle hot fudge and caramel sauce over it.
Yummy! Now that’s what you call a Mexican fiesta! This meal has all the necessary meats and carbs to fill you up for the rest of the day. This is perfect to serve on special occasions and family gatherings. Thank you for sharing the recipe, and happy cooking!
