BLACK BEAN & CORN PASTA SALAD
1 (16-ounce) box rotini tri-colored pasta, cooked
2 cans black beans rinsed and drained well
1 small bag frozen corn, thawed
1 can Rotel
4 green onions, chopped
½ cup bell pepper, chopped
½ cup white onion, chopped
2-3 Tablespoons fresh cilantro chopped
¾ of a large bottle
of Zesty Italian dressing
Mix all together and refrigerate at least 2 hours.

ReplyDeleteTried this today. Would eliminate cilantro entirely and reduce green onions by half. Interesting dish. Requires a breath mint or two.

DeleteI used parsley instead of cilantro and it was great, I really like this salad and was able to use up things I had in my pantry that needed to be used: black beans :)

ReplyDeleteHope you don't mind me answering. Since the black beans are canned, all you need to do is drain & rinse them. I've actually never used thawed frozen corn in recipes, so I can't attest to that. I always prefer to go with canned. :)

ReplyDeleteI love the idea of these ingredients, but don't understand using an Italian dressing...I would use some salad dressing with a Mexican flair...chipotle ranch or honey chipotle ranch..
