Recipes from today's show..Red Beans & Rice! Enjoy :)

RED BEANS & RICE
TOMATO, CUCUMBER & ONION SALAD
OLD-FASHIONED CORN BREAD
NEW ORLEAN’S STYLE PRALINES

Tomato, Cucumber and Onion Salad
3 large tomatoes or 6 small, chopped
1 onion, sliced
1 large cucumber, diced
¼ cup vegetable oil
½ cup vinegar
3 T sugar
Salt and pepper to taste
Mix all ingredients together and refrigerate at least 2 hours.  The longer it sits, the better.

RED BEANS & RICE WITH SMOKED SAUSAGE & HAM
1 (16-ounce) bag dry light or dark red kidney beans
1 (16-ounce) package smoked turkey or beef sausage, sliced or quartered (I use Conecuh)
1 ham steak, cubed
1 tablespoon olive oil plus 1 tablespoon butter
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
2 teaspoons each of salt, pepper, garlic powder, onion powder (taste and add more if needed)
2 tablespoons Cajun seasoning (add more if needed)
Water
Hot cooked rice
Pour red beans into a large pot and cover with water.  Place the lid on the pot and let them soak overnight or at least 8 hours.  Pour the soaked beans out into a colander and rinse and drain well, picking any bad beans out.  Set to the side.  In the large pot, heat olive oil and butter and add sausage and ham.  Sauté over medium heat or until sausage is browned.  Watch closely J Remove the sausage and ham with a slotted spoon and set aside.  Sauté the veggies in the leftover oil from the sausage and ham until they are very brown and soft.  Next, add the sausage, ham and beans to the veggie mix.  Add enough water just to cover the beans-about 3 to 4 cups.  Add all seasonings and bring to a boil.  Once it comes to a boil, turn the heat to very low or simmer mode and cover.  Cook for 1 ½ hours or until beans are soft.  It’s very important that you taste this as you make it so you can add more seasonings if you desire J The Friday Fam likes it spicy!  If you prefer a thicker sauce, add 1 tablespoon of cornstarch to ½ cup cold water.  Stir well and stir into the bean mixture.  Serve over hot rice and a slice of cornbread.  Pepper sauce sprinkled over the beans and rice is oh, so delicious, too!
OLD-FASHIONED CORNBREAD
A black skillet is a must for this recipe J
2 cups self rising cornmeal
2 tablespoons vegetable oil + 1 ½ tablespoons more
3 tablespoons sugar
1 ½ cups whole milk or buttermilk
1 egg, beaten
Place the 1-½ tablespoons vegetable oil in a black skillet and heat on a burner for 2 to 3 minutes.  Meanwhile, mix cornmeal, 2 tablespoons of oil and the remaining ingredients together well.  Turn the heat off the skillet and carefully pour the cornmeal mixture over the hot oil.  Place in a 425 oven for 25 minutes.  Let cool for 10 minutes before serving.


PRALINES
1 ½ cups sugar
¾ cup dark brown sugar
½ cup whole milk
1 teaspoon vanilla extract
6 tablespoons real butter
1-½ cup pecans, rough chopped
Lay out wax paper and a tablespoon on your countertop before getting started on the pralines.  Next, combine all the ingredients in a 4-quart saucepan.  Heat over low heat, stirring often until butter is melted and sugars are dissolved.  Bring to a boil then turn the heat down to medium high –letting the mixture continue to boil for exactly 3 minutes, stirring constantly with a wooden spoon.  It will bubble up pretty high, so never leave it even just for a second.  After 3 minutes of boiling and stirring, remove the pot from the heat and stir constantly for 2 minutes.  It will start to thicken.  Now (using a tablespoon that you would eat soup with) drop onto the wax paper, working quickly.  Let them sit for 10 to 15 minutes.  Store in an airtight container.  This recipe makes 12-14 pralines.  These are delicious by themselves or broken over vanilla ice cream J  Caution:  Be very careful when making these as the candy mixture becomes scalding hot and be mindful of the weather.   Really humid days can make these difficult to set.

How fun is this?! There's something about individual servings that just makes it more fun to eat:) Not to mention how delicious this salad is!

LAYERED SALAD IN A JAR
1 large head of iceberg lettuce, washed, patted dry and chopped
5 hard-boiled eggs, chopped or sliced
8 slices bacon, cooked and crumb
1 small bag frozen green peas, thawed
1 (8-ounce) bag sharp cheddar, shredded
DRESSING:
1 cup sour cream
1 cup real mayo (I use Hellman’s)
3 tablespoons sugar
1 tablespoon vinegar
1 teaspoon pepper
15 (12-ounce jars)

Mix the ingredients together for the dressing and set aside.  Place enough lettuce in each jar to fill it halfway, then press the lettuce down to pack it.  Layer the rest of the ingredients as they are listed above, starting with the lettuce and ending with the peas.  Spread the dressing evenly over the peas sealing the edges and top with cheese.  Place the lids on each jar and refrigerate for at least 6 hours or overnight.  Delicious!

It's officially Fall so I thought you guys might like this :) Enjoy!

DUTCH APPLE PIE

Crust & Topping:
2 cups flour
½ cup oatmeal (I use quick-cooking oats)
1 cup brown sugar
1 teaspoon ground cinnamon
1 stick plus 4 tablespoons real butter, melted

For the filling:
2/3 cup sugar
3 tablespoons cornstarch
1 ¼ cups water
3 cups of apples, sliced and peeled (I use Granny Smith)
1 teaspoon ground cinnamon
1 teaspoon vanilla

Combine the first 5 ingredients, mixing well.  Set aside 1 cup (this will be for the topping).  Press the rest of the mixture into a 9-inch pie plate.  For the filling, place the water and cornstarch into a small saucepan and stir until the cornstarch has dissolved.  Add the sugar and place the saucepan on the stove and bring to a boil.  Cook for 1 to 2 minutes or just until mixture begins to thicken.  Remove from heat and stir in the apples, cinnamon and vanilla.  Pour this mixture into the crust and top it with the 1 cup of the reserved crust/topping mixture.  Bake at 350 for 40 to 50 minutes or until golden brown.  Let it cool for about 20 minutes before serving.  Add a dollop of vanilla ice cream before serving, if desired J  Enjoy!

Recipes from this morning's show--you've got to try these recipes--especially the White Chocolate Bread Pudding :) Enjoy!

SALAD WITH HOMEMADE CREAMY ITALIAN DRESSING
SHRIMP PASTA CASSEROLE
CHEESY GARLIC BREAD
WHITE CHOCOLATE BREAD PUDDING

SALAD WITH HOMEMADE CREAMY ITALIAN DRESSING
1 bag of romaine lettuce
1 cup cherry tomatoes, sliced
1 cucumber, chopped
1-cup pepperoncini, sliced
½ cup crispy fried onions (you find these on the aisle with the croutons)
For the dressing:
½ cup mayo
3 tablespoons whole milk
1 tablespoon red-wine vinegar
1 ½ tablespoons sugar
½ teaspoon Italian seasoning
3 cloves fresh garlic, chopped
Salt and pepper to taste
Whisk all ingredients together and refrigerate for at least an hour.  Overnight is even better!  This makes enough for  4 to 6 salads.  A little goes a long way.

SHRIMP PASTA CASSEROLE
1 stick butter
12-ounce box Linguine Pasta, cooked and drained
1 small onion, chopped
1-½ lbs shrimp, peeled
1 can cream of mushroom soup
1 cup whole milk
1 16-ounce box Velveeta Cheese
1 8-ounce package shredded pepper jack cheese
1 t. each of garlic powder, onion powder, Cajun seasoning, salt and pepper
Melt butter in a skillet and add onions; sauté’ for 10 minutes.  Add soup, milk and cheese.  Next add the shrimp and cook for just 1-2 minutes.  The shrimp will continue to cook in the oven.  Mix with drained pasta and pour into a 13x9x2 greased baking dish and bake, covered, at 350 for 25 minutes.
CHEESY GARLIC BREAD
1 loaf French bread cut in half
1 stick butter, room temperature
1 teaspoon each of salt, garlic powder and black pepper
3 cloves garlic, chopped
¼ cup grated fresh Parmesan cheese
1 cup sharp cheddar, grated
Mix all the ingredients together very well and spread evenly over the French bread.  Place on a baking sheet and bake at 450 for 8 to 10 minutes or until golden brown.

WHITE CHOCOLATE BREAD PUDDING
1 Loaf French Bread

1 Quart Heavy Whipping Cream
or Half-n-Half
3 Eggs

2 Cups Sugar

2 Tablespoons Vanilla Flavoring
1 Bag White Chocolate Chips
Cut Bread into 1” pieces and place in medium mixing bowl. Pour Whipping Cream over bread and stir. Put in refrigerator and chill for 30 minutes. In another medium bowl mix eggs (slightly beaten), sugar and vanilla flavoring. Pour this over bread mixture and stir well. Stir in white chocolate chips.
Pour into a greased 9X13x2 baking dish and bake@ 350° for 45-55 minutes or until golden brown.
