SHRIMP FETTUCCINI
SALAD WITH HOMEMADE CAESAR DRESSING
BEST-EVER CHOCOLATE CHIP COOKIES
SHRIMP FETTUCCINI
For as simple as this dish is to make, it is absolutely
delicious!
1 stick butter
1 cup chopped onion
3 cloves fresh garlic, minced
1 ½ lbs. peeled shrimp
1 (10-ounce) can cream of mushroom soup
1 cup sour cream
8 ounces Velveeta cheese, cubed
1 tablespoon Cajun seasoning
1 ½ teaspoons salt
8 ounces fettuccini, cooked and drained
¾ cup grated Parmesan cheese
Melt butter in a large pot and add the onion. Sauté’ the onion for about 4 minutes and add
the garlic. Sauté’ the garlic 1
minute. Stir in the shrimp, soup, sour
cream, Velveeta, Cajun seasoning and salt.
Simmer on low until the cheese is melted, stirring constantly. Add the pasta and stir well. Pour the mixture into a 13x9 - baking dish
and sprinkle with Parmesan cheese. Cover
with foil and bake for 25 minutes.
HOMEMADE CAESAR DRESSING
3 cloves garlic, finely minced
1 ½ teaspoons anchovy paste
2 tablespoons fresh lemon juice
1 ½ teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 cup mayo
2/3 cup fresh grated parmesan (super fine)
salt and pepper to taste
In a large bowl, mix all the ingredients together well and
refrigerate for at least an hour.
Overnight is best. This dressing
is delicious!
BEST-EVER CHOCOLATE CHIP COOKIES
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2-½ cups oatmeal (you can put the oats in a food processor
or leave them whole)
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon soda
1 12-ounce bag chocolate chips
1 ½ cups chopped nuts, optional
Cream the butter and both sugars. Add the eggs and vanilla; mix together with
the flour, oatmeal, salt, baking powder and soda. Add the chocolate chips and nuts. Roll into balls and place 2 inches apart on a
cookie sheet. Bake at 375 for 10
minutes. Makes about 60 cookies.
